Tips to the correct way to buy and store cheeses.Cheese is not only cheaper to buy in bulk to slice or shred on your own, it also keeps better in large blocks. Still, if you buy it in large enough quantities, you may have a hard time using it up before it starts to get fuzzy. Freezer to the rescue! Most hard cheeses freeze very well, particularly if shredded and stored in airtight bags, and shredded cheese directly from the freezer will save you quite a bit of time in terms of both food prep and cleanup. If you add a little flour to the cheese before placing it in the freezer, it’ll help to keep the cheese from clumping up.
