Saving Bacon Grease

Bacon grease is useful in many dishes — here’s how to store it.Next time you cook bacon, consider saving the grease that remains. Many recipes call for a little bacon grease instead of oil or butter, and you can easily save the grease by letting it cool but not solidify, then pouring it into an ice cube tray. Once frozen, the “grease cubes” can be removed from the tray and stored in the freezer in an airtight freezer bag. Any time you get a recipe calling for a little bacon (or specifically calling for bacon grease), try using one of these cubes instead of the called for butter or oil.
