“Prepare” Vegetables to Assure They Get Eaten

Pop quiz. What are more likely to get eaten and not go bad in the refrigerator: vegetables left in the original bags, or those that have been peeled and cut up?


Vegetables such as carrots and celery will be consumed much more quickly if they are prepared (peeled and cut up) and stored in plastic containers in the refrigerator. If left too long though, they may dry out or get limp, so start out only doing up half a bag of, say, carrots and seeing how long your family takes to eat them.

This is a great way to create healthy snacks and assure that the produce you paid good money on does not go to waste.
