Jerk Chicken
The classic taste of Jamaican jerk chicken… from a crockpot!
- 1 large onion, cut into chunks
- 1 teaspoon ground ginger or 1 tablespoon minced crystallized ginger
- 1/2 to 1 habanera pepper, seeded, deveined, and finely minced
- 1/2 teaspoon ground allspice
- 2 tablespoons dry mustard
- 1 teaspoon freshly ground black pepper
- 2 tablespoons red wine or balsamic vinegar
- 2 tablespoons soy sauce
- 2 cloves garlic, crushed and minced
- 3 to 4 pounds chicken tenders or boneless breasts
Combine all ingredients except the chicken in a blender or food processor and whirl it up until it is well-blended. Pour this sauce over the chicken in a crockpot and cook on low for 6-8 hours, 3-4 hours on high. Makes 4 servings.
