Scalloped Potatoes with Swiss Cheese

Throw in some ham for an added protein boost.

  • 2 pounds baking potatoes, peeled and thinly sliced
  • 1/2 cup finely chopped yellow onion
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg
  • 3 tablespoons cold butter, cut into 1/8-inch pieces
  • 1/2 cup milk
  • 2 tablespoons all-purpose flour
  • 4 ounces shredded Swiss cheese or slices, torn into small pieces
  • garnish: 1/4 cup finely chopped green onion

Layer the potatoes, onion, salt, nutmeg and butter in the crockpot, then cook on low for 7-8 hours (4 hours on high). Remove the potatoes from the crockpot with a slotted spoon, then stir in the milk/flour mixture and Swiss cheese. Cook on high for 15 minutes and pour the thickened sauce over the potatoes. Garnish with the green onions.
