Pumpkin Pudding

Think pumpkin pie in pudding form. And much like pie, whipped cream is the perfect topping.

  • 1 can pumpkin puree (15 ounces)
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons vanilla
  • 1 can evaporated milk (12 ounces)
  • 3/4 cup sugar
  • 1/2 cup biscuit mix
  • 2 tablespoons butter
  • 2 eggs

Mix all ingredients with an electric mixer until smooth and pour into a buttered crockpot. Cook on low for 6-8 hours, or on high for 3-4 hours.
