Corned Beef and Cabbage

The classic St. Patrick’s Day Feast. With the crockpot doing all the cooking, you’ll have more time to pound down a few green beers. Or teas. It’s the green part that’s important. J

  • 3 carrots, cut 2-inch pieces
  • 3 potatoes, cubed
  • 1 corned beef brisket, about 4 to 5 pounds
  • 3 medium onions, cut in wedges
  • 1 cup water
  • 1/2 small head of cabbage, cut in wedges

Add all the ingredients except for the cabbage and cook on low for 8-10 hours. Add the cabbage, turn the slow cooker to high and cook for an additional 2-3 hours. The vegetables here can be cooked by themselves outside of the crockpot. This can be helpful if your crockpot is too small (and you cook vegetables for a small army like we do) or if you have vegetarians coming for dinner. The taste will be a little less complex (some would say “cleaner”), but it’s a perfectly acceptable alternative. The primary thing to remember when cooking the meat is: sloooooooow.
