Chicken and Corn Chowder

Excellent as a meal in and of itself served with bread.

  • 2 tablespoons butter
  • 1 1/2 lbs chicken tenders or boneless, skinless breasts, cut into 1/2-inch cubes
  • 1/2 cup chopped onion
  • 2 ribs celery, sliced
  • 2 small carrots, sliced
  • 2 cups frozen corn kernels
  • 2 cans cream of potato soup
  • 1 1/2 cups chicken broth
  • 1 teaspoon dried dill weed
  • 1/2 cup half and half

Brown the chicken in a skillet in the butter, then transfer to the crockpot. Add the onions and celery to the skillet and sauté until tender, then add those to the crockpot as well. Add all other ingredients except for the half and half and cook on low for 5-6 hours. Add the half and half and cook for an additional 15 minutes.
