Cream of Mushroom Soup

While many recipes call for the inclusion of mushroom soup, this one actually walks you through the steps to make your own.

  • 12 to 16 ounces sliced mushrooms
  • 1 tablespoon butter
  • 3 cups chicken broth
  • 2 tablespoons onion, chopped
  • salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • 1 cup half and half

Saute the mushrooms in the butter in a skillet until they brown slightly, then add them to the crockpot. Add the chicken broth, onion, salt and pepper and stir. Cook on low for 5-7 hours, or high for 2 ½-3 hours. In the last 30 minutes, add a combination of the flour and sour cream and stir in the half and half.
