Cream of Sweet Potato Soup
A delicious twist on winter squash soup. Cinnamon and ginger can also be added instead of the cloves and nutmeg for a different spicy taste. A dollop of sour cream makes a nice garnish here.
- 3 sweet potatoes, peeled and sliced
- 2 cups chicken broth
- 1 teaspoon sugar
- 1/8 teaspoon ground cloves
- 1/8 teaspoon nutmeg
- salt to taste
- 1 1/2 cups light cream, half-and-half, or milk
Combine the sweet potatoes and broth in a crockpot and cook on high for 2-3 hours. Puree in a blender and return to the crockpot. Add the remaining ingredients and cook on high for 1-2 hours.
