Ham Soup With Beans

Similar to a split pea soup, except with Navy or other beans.

  • 1 meaty ham bone
  • 2 cups Navy beans or mixed beans, washed, sorted, and soaked overnight
  • 8 c. water
  • 1 clove garlic, minced (or 1/2 tsp. garlic powder)
  • 1 bay leaf
  • 1 lg. onion, chopped
  • 1 tbsp. lemon juice
  • 1 tbsp. honey
  • Salt & pepper, to taste

Combine all but the lemon, honey and salt and pepper in a crockpot and cook on high for 1 hour. Turn to low and cook for 8-10 hours. Remove the ham bone and season with the lemon, honey and salt/pepper. Remove the ham from the bone, chop, and return it to the crockpot. Remove the bay leaf from the pot, stir and serve.
