Minestrone
Another soup that is a meal in itself.
- 1 pound lean stew beef, cubed
- 6 cups water
- 1 can (28 ounces) tomatoes with juice, cut up
- 2 beef bouillon cubes
- 1 medium onion, chopped
- 2 tablespoons dried parsley, minced
- 2 1/2 teaspoons salt, or to taste
- 1 1/2 teaspoons ground thyme
- 1/2 teaspoon pepper

- 1 medium zucchini, thinly sliced
- 2 cups cabbage, finely chopped, cooked until just tender, drained
- 1 can (15 ounces) garbanzo beans, drained
- 1/2 cup small elbow macaroni, cooked
- 1/4 cup grated parmesan cheese
Combine all ingredients up to the line and cook on low for 7-9 hours. Add the vegetables, beans and macaroni and cook on high for 30-45 minutes. Serve with parmesan sprinkled on the top.
