Seafood Cioppino
Use the seafood listed here merely as a guide. Whatever you have available to you will work great!
- 1 large can (28 ounces) crushed tomatoes with juice
- 1 can (8 ounces) tomato sauce
- 1/2 cup chopped onion
- 1 cup dry white wine
- 1/3 cup olive oil
- 3 cloves garlic, minced
- 1/2 cup parsley, chopped
- 1 green pepper, chopped
- 1 hot pepper (optional), chopped
- salt and pepper, to taste
- 1 teaspoon thyme
- 2 teaspoons basil
- 1 teaspoon oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 deboned and cubed fillet of cod
- 1 doz. prawns
- 1 doz. scallops
- 1 doz. mussels
- 1 doz. clams
Combine all but the seafood in the crockpot and cook on low for 6-8 hours. In the last 30 minutes, add the seafood and turn to high, stirring occasionally.
