White Beans With Tuna

This is not your mother’s tuna casserole.

  • 4 tablespoons olive oil
  • 1 clove garlic, crushed
  • 1 pound small white beans, soaked overnight and drained
  • 2 cups chopped tomatoes
  • 2 6-1/2oz can white tuna in water, drained and flaked
  • 1 1/2 teaspoons dried basil
  • salt and pepper, to taste

Sauté the garlic in the oil until brown, then discard the garlic. Add the oil to the beans along with 6 cups of water to the crockpot and cook on high for 2 hours. Turn the heat to low and cook for an additional 8 hours. Add the rest of the ingredients, turn the crockpot back to high and cook for 30 minutes.
