Apple Cider Beef Stew

Apple cider gives this beef stew a little extra sweet kick.

  • 1 1/2 to 2 pounds lean beef stew meat
  • 8 carrots, sliced thin
  • 6 medium potatoes, sliced thin
  • 2 apples, chopped
  • 2 teaspoons salt
  • 1/2 teaspoon thyme
  • 1/2 cup chopped onion
  • 2 cups apple cider

Add vegetables and meat to the crockpot. Sprinkle with the thyme and salt, then pour the cider over all. Cook on low for 8-10 hours. To thicken the stew, combine 2 tablespoons of flour with 2 tablespoons of water and stir into the stew. Continue to cook for a few minutes on high until it thickens.
