Barley Soup
A soup so hearty it’s almost a stew.
- 1 pound lean stew beef, cubed
- 1/2 cup chopped onion
- 2 ribs celery, chopped
- 2 medium carrots, diced
- 3/4 cup barley
- 1 bay leaf
- 6 cups beef broth
- salt and pepper to taste
Combine all in a crockpot except for the salt and pepper and cook on low for 6-8 hours. Salt and pepper to taste and serve with a crusty bread.
