Tomato juice gives this ground beef and broccoli soup its unique taste.
- 1 1/2 lb. lean ground beef
- 3 cup broccoli, chopped
- 1 cup fresh chopped mushrooms
- 1/2 cup celery, chopped
- 1 cup carrots, sliced
- 1/4 cup green pepper, chopped
- 4 cups V-8 juice or tomato juice
- 1/2 cup water
- 1/4 to 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. thyme
- 1/4 tsp. oregano
Brown the beef and drain, then add it and the rest of the ingredients in a crockpot and cook on low for 8-9 hours.
