Black Beans and Rice Soup

This soup has a strong SouthWest flare. As such, a great serving suggestion is to combine it with warm flour tortillas and a dollop of sour cream.

  • 1/2 cup chopped onion
  • 3 carrots, thinly sliced
  • 2 ribs celery, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1 1/2 teaspoons dried basil
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Tabasco sauce
  • 2 cans (16 ounces each) black beans, drained and rinsed
  • 1 can (14.5 ounces) crushed tomatoes
  • 2 cans chicken broth, or about 3 to 3 1/2 cups
  • 1 to 1 1/2 cups hot cooked rice

Combine all ingredients but the rice in a crockpot and cook on low for 7-9 hours. Add the rice just before serving and stir well.
