Chicken Parmesan

Another chicken recipe with an Italian flare. This one uses pre-made spaghetti sauce and makes for an interesting change from spaghetti Wednesdays. Serve this over rice or pasta.

  • 2 tablespoons vegetable oil
  • 6 to 8 boneless chicken breast halves
  • salt, pepper and Italian seasoning
  • 2 cups spaghetti sauce
  • 1 bay leaf
  • garlic clove or powder
  • 1 cup shredded Mozzarella cheese
  • grated Parmesan cheese

Dredge the chicken in the salt, pepper and Italian seasoning, then brown in a pan containing the oil. Place browned chicken in a crockpot and cover with the sauce, bay leaf and garlic. Cook on low for 5-6 hours or until chicken is done. Place the chicken and sauce in an oven-proof pan, sprinkle with the cheeses and bake at 350 degrees until the cheese is melted.
