Cola Chicken

Have a can of Coke or Pepsi kicking around and looking for a dinner plan? It doesn’t get much simpler than this mock BBQ chicken recipe made with soda pop.

  • 1 whole chicken
  • 1 cup ketchup
  • 1 large onion, thinly sliced
  • 1 cup cola, Coke, Pepsi, or similar soda

Salt and pepper the washed chicken and place in a crockpot. Top with the onions, then pour over it the ketchup and soda. Cook on low for 6-8 hours.

    Whole chickens like this that have a bbq type of base are even better if you throw them under the broiler for a couple of minutes at the end. The chicken will be pretty much falling apart when it comes out of the cooker, so just arrange pieces on a pan and broil until you get some color to it. Just like coming off the grill (ok, kind of). πŸ™‚

    Hmm, that broiler trick sounds interesting. We’ll have to try that. I’m generally not a huge fan of chicken in the crockpot. It comes out ok, but regardless what you do to it, it always seems to have the same texture, etc. I guess I’m just a roasting/grilling fan, but this broiling “top-off” might just inspire me to try slow-cooked chicken more often. Thanks!
