Baked beans, Mexican-style.

  • 1 1/2 pounds dried pinto beans, cooked according to package directions until just tender
  • 6 ounces salt pork, diced
  • 1/2 tsp.ground cumin
  • 1 tsp. black pepper
  • 1 clove garlic, minced

  • 2 ripe med. tomatoes, chopped
  • 1/4 cup chopped onion
  • 1 bunch cilantro, minced
  • 1 can (8 ounces) tomato sauce
  • Salt to taste

Combine everything up to the line in a crockpot with just enough water to cover all and cook on low for 5-7 hours, or high for 2 ½-4 hours. Add everything below the line and cook for another 30 minutes, or until hot.
