How To Roast Pumpkin Seeds

Carving a pumpkin is only the first step. To really get into the Halloween spirit, try roasting off some of the resulting pumpkin seeds. Pumpkin seeds are not only tasty, but are also really good for you, containing zinc, magnesium, vitamin E, and many other nutrients.Roasted Pumpkin Seeds

Ingredients:

1 ½ cup pumpkin seeds
2 teaspoons melted butter
1 pinch salt

Directions:

Disembowel a pumpkin, removing the seeds from the pulp. Wash and drain the seeds in a colander. Combine with the butter and salt, then spread in a single layer on a baking sheet.

Bake at 300 degrees for 45 minutes, or until the seeds are golden brown.

Variations: for healthier seeds, try using olive oil instead of butter. You can also jazz them up a bit by using garlic salt in place of salt, or adding a Cajun or Creole spice to them before baking.
