Lime Mint Iced Tea Recipe

This iced tea recipe, both sweet and tart, is perfect for mid-summer refreshment. It goes without saying, fresh lime juice is preferable here.

1 quart hot water
4 tea bags
1 ½-2 cups cups fresh mint leaves
¼ cups sugar
¼ cups lime juice

Let tea bags, mint and sugar steep in the hot water for 15 minutes. Strain out the bags/mint and chill. Add the lime juice and mix well after the tea has cooled.

Notes: Boiling water tends to “burn” mint leaves, so if you heat the water to boiling, let it sit for five minutes or so so that it cools slightly before adding the tea, mint and sugar.
