Maple Glazed Sweet Potatoes

A favorite here in Vermont!

  • 5 to 6 medium sweet potatoes
  • 1/4 cup brown sugar
  • 1/4 cup pure maple syrup
  • 1/4 cup apple cider
  • dash salt and pepper to taste

Peel and cut the sweet potatoes into ½-inch slices. Blend together the remaining ingredients and pour them over the potatoes in a crockpot. Cook on low for 7-9 hours, stirring occasionally.
