Another soup that is a meal in itself.

  • 1 pound lean stew beef, cubed
  • 6 cups water
  • 1 can (28 ounces) tomatoes with juice, cut up
  • 2 beef bouillon cubes
  • 1 medium onion, chopped
  • 2 tablespoons dried parsley, minced
  • 2 1/2 teaspoons salt, or to taste
  • 1 1/2 teaspoons ground thyme
  • 1/2 teaspoon pepper

  • 1 medium zucchini, thinly sliced
  • 2 cups cabbage, finely chopped, cooked until just tender, drained
  • 1 can (15 ounces) garbanzo beans, drained
  • 1/2 cup small elbow macaroni, cooked
  • 1/4 cup grated parmesan cheese

Combine all ingredients up to the line and cook on low for 7-9 hours. Add the vegetables, beans and macaroni and cook on high for 30-45 minutes. Serve with parmesan sprinkled on the top.
