Orange Chicken

Mandarin oranges and coconut give this a real tropical touch.

  • 6 boneless chicken breast halves, skinned
  • 1/2 teaspoon ground ginger
  • salt and pepper
  • 6 ounces frozen concentrate orange juice
  • 1 cup shredded coconut
  • 1 1/2 cups mandarin oranges
  • 4 green onions, chopped

Combine the chicken, ginger, salt, pepper and orange juice in the crockpot and cook on low for about 6 hours. Serve the chicken on rice with the coconut, mandarin oranges and onions atop it.
