Recipe – Parmesan Breaded Chicken

This is a very simple, and tasty, alternative to traditional breaded chicken.


3 pounds chicken pieces or boneless chicken
2 eggs
2 tablespoons milk
1 cup flour
1 cup bread crumbs
1 cup Parmesan cheese
Salt and pepper


Remove the skin from the chicken pieces, then set up your breading station. You’ll need three bowls: one with the flour; one with the eggs and milk, whisked together; one with the bread crumbs, Parmesan cheese, and salt and pepper combined.

Piece by piece, dip the chicken in the flour, shaking off any excess. Then dip in the egg mixture until the pieces are completely coated. Finish off by dredging them in the bread crumbs/Parmesan mixture until they are fully coated with breading.

Place all pieces on a well-oiled baking pan and cook for 45 minutes at 400 degrees (F), or until they brown slightly and the centers have lost all pink, but are still juicy.

Variations and tips:
Try adding your favorite herb to the breading mixture, or an Italian combination. When it comes to breading, your best bet is to view one of your hands as your “dry” hand, and one as your “wet” hand. You’ll wind up with a lot less breading on your hands this way.
