Pasta with Beef and Bacon Recipe

This is a great use for leftover roast beef.


6 slices bacon
1 clove garlic, minced
½ green pepper, chopped
½ onion, chopped
2 tablespoons flour
1 ½ cups beef stock
1 teaspoon sage
1 teaspoon parsley
Salt and pepper to taste
Leftover roast beef
1 can black-eyed peas (15 ounce)
Cooked pasta
Parmesan cheese

Fry bacon in a skillet until crisp, let cool on a paper towel, and crumble. Sauté the garlic, green pepper and onion in the bacon grease until the onion starts to turn translucent. Add the flour and stir until smooth, then slowly add in the beef stock.

Add the remaining ingredients, including the bacon, and simmer for a few minutes. Serve over warm pasta with Parmesan cheese. Serves six.
