Scalloped Potatoes with Swiss Cheese
Throw in some ham for an added protein boost.
- 2 pounds baking potatoes, peeled and thinly sliced
- 1/2 cup finely chopped yellow onion
- 1/4 tsp salt
- 1/4 tsp ground nutmeg
- 3 tablespoons cold butter, cut into 1/8-inch pieces
- 1/2 cup milk
- 2 tablespoons all-purpose flour
- 4 ounces shredded Swiss cheese or slices, torn into small pieces
- garnish: 1/4 cup finely chopped green onion
Layer the potatoes, onion, salt, nutmeg and butter in the crockpot, then cook on low for 7-8 hours (4 hours on high). Remove the potatoes from the crockpot with a slotted spoon, then stir in the milk/flour mixture and Swiss cheese. Cook on high for 15 minutes and pour the thickened sauce over the potatoes. Garnish with the green onions.
