Spiced Bananas

This is an easy dessert recipe that goes particularly well with ice cream of any flavor.

  • 6 ripe but firm bananas
  • 1/2 cup flaked coconut
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup dark corn syrup
  • 1/4 cup butter, melted
  • 1 tablespoon grated lemon peel
  • juice of one lemon

Peel the bananas and place them in the bottom of the crockpot, sprinkled with the coconut, cinnamon and salt. Combine the remaining ingredients and pour them over the bananas. Cook on low for 1 ½ to 2 hours.
