Taco Bake

Make this simple taco bake beforehand and throw it in the oven for a half hour for a quick, hearty meal. This recipe serves four.


½ pound ground beef
1 can tomato soup
1 cup salsa
½ cup milk
8 corn tortillas, cut into 1-inch pieces
1 cup shredded cheddar cheese

Brown the ground beef in a large skillet. Drain off the fat, then add the rest of the ingredients, reserving half the cheese. Spoon into a baking dish, cover, and cook on 400 degrees for 30 minutes. Sprinkle the rest of the cheese on top and serve hot.

Note: flour tortillas can also be used in place of corn.
