Vegetable Beef Soup

This Italian soup combines ground beef with a variety of vegetables.

  • 1 1/2 cups corn kernels, or 1 can, drained
  • 1 1/2 cups diced zucchini
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 2 to 3 medium potatoes diced
  • 1 1/2 pounds lean ground beef
  • 2 teaspoons dried leaf oregano
  • 1/2 teaspoon dried leaf basil
  • dash garlic powder
  • 2 bay leaves
  • salt, to taste

Brown the ground beef and drain well. Combine with all other ingredients except the salt in a crockpot and cook on low for 6-8 hours. Salt to taste and serve topped with Parmesan cheese.
